Lamb Casserole With Pasta - Serves 6

 

  • 8-10 Large Tomatoes
  • 1  Large Onion chopped
  • 1  Clove Garlic, crushed3 lb
  • (1˝ kg) shoulder of Lamb 
  • off the bone.
  • ˝ cup Olive Oil
  • 1  Onion, finely chopped
  • 1  Clove Garlic, crushed
  • 2  Cup Rice
  • Salt, Oregano, Pepper
  • 1 lb. (500 gr) Kritharáki, (Rice-shaped Pasta)
  • Grated Parmesan Cheese
  • 6 Ripe chopped Tomatoes

 PREPARATION AND COOKING

  1. Preheat Oven to 350F. Cut the Meat into 5-6 pieces.
  2. Put the Oil, Onion, Garlic in a casserole, cook until soft, brown meat.
  3. Add Tomatoes, Oregano and season with Salt & Pepper.
  4. Cover and cook in the oven for 1 hour or until Meat is tender.
  5. Add 2-3 cups of water and the Kritharáki.
  6. Cover, put in the oven for 30 minutes stirring often.
  7. Sprinkle with grated Kefalotíri or Parmesan cheese.
