SOFRITO

 Stewed Steak (From Corfu) Serves 5 persons

  • 2½ lbs. (1¼ kg) loin or Veal chops, cut into ½ inch slices
  • ½ cup Olive Oil
  • ¼ cup Vinegar
  • 2-3 cloves Garlic crushed,
  • chopped Parsley,
  • Seasoned flour
  • 1½ cup hot water

 PREPARATION AND COOKING

  1. Toss the meat in flour. Heat the Oil in a saucepan and fry the chops.

  2. Add Garlic, Vinegar, Water and Parsley.

  3. Cover and cook over a low heat for about 1 hour  .... or until Meat is tender and sauce has thickened.

  4. Serve with mashed, roast potatoes or chips.
