Arni Fricassé

 

Lamb Fricassee With Lettuce - Serves 4

 

  • 2½  lbs. (1¼ kg) shoulder Lamb
  • 2 Onions, sliced
  • 4 Spring Onions with green  stems sliced
  • ½ cup Butter
  • 2  tablespoons Flour
  • 2  Small lettuces cut in strips,
  • as for Salad
  • 2   Tablespoons Salt
  • ½  Teaspoon Pepper
  • ½  Cup chopped Parsley
  • Egg yolks & Lemon juice

 PREPARATION AND COOKING

Saute Meat and Onions in Butter. Sprinkle with Flour and mix well. Add lettuce, 4 cups hot water, Salt, Pepper and Parsley. Simmer covered until Meat is tender.

 

Egg and Lemon Sauce

 

Beat Egg yolks with 2 tablespoons of hot water. Add Lemon juice and ½ cup of the Lamb gravy, continue beating for a while.

 

Pour Egg mixture gradually over Meat and gravy, stirring all the time.
