Chicken Stew with Macaroni

 

  • 3 lbs  (1˝ kg) Chicken
  • 1 Cup Olive oil
  • 1 Large Onion, finely chopped
  • 2 Cloves Garlic, crushed
  • 1lb Macaroni
  • 2 lbs ripe Tomatoes
  • 2 Tablespoons Tomato paste
  • 1  Cup Parmesan cheese
  • Salt, Black Pepper and Cinnamon

 PREPARATION AND COOKING

  1. Cut the chicken into serving pieces. In a heavy-bottom saucepan heat the oil and cook the onions & garlic until they are soft. 
  2. Add Chicken and brown well all over. 
  3. Cover Chicken with hot water. Bring to boil, then simmer until meat is nearly tender, stirring frequently. 
  4. Add pepper, salt, cinnamon, tomatoes (liquidised) and 2 soup
    spoons tomato paste (diluted in hot water). 
  5. Stir and cook until meat is tender. 
  6. Cook macaroni in salted water adding little oil and drain when ready. 
  7. Put meat on to a serving plate.  
  8. Drop macaroni into the red thick sauce and stir for a minute. 
  9. Serve macaroni sprinkled with parmesan cheese and the Meat in a serving plate in the middle of the table.
