Gigantes Plakí

 Butter Beans in the Oven -  Serves 6 persons

  • 1 lb (450 gr) dried butter Beans
  • ˝ Cup Olive Oil
  • 2 Onions, finely chopped
  • 1 lb (450 gr) Tomatoes, peeled
  • and chopped
  • 2 Tablespoons Tomato puré
  • Oregano and Salt
  • Ground Black Pepper
  • 3 Sprigs Parsley chopped
  • 1 Clove Garlic, crushed

 PREPARATION AND COOKING

  1. Soak the Beans in water overnight.
  2. Boil the soaked Beans for 30 minutes.
  3. Preheat the Oven to 180oC (350oF).
  4. Heat the Oil in a saucepan and sauté the Onions and Garlic until Onions are soft and transparent.
  5. Add Parsley, Tomatoes, Tomato purée, Oregano and seasonings. Cook over medium heat for 10 minutes.
  6. Place the Beans in a casserole, pour the mixture over them. If too thick, add a little water.
  7. Bake, uncovered, in the preheated oven for 30 to 45 minutes.
  8. Serve warm directly from the casserole.
